Fafodil’s gherkins in natural alcoholic vinegar are harvested at their tender stage, when they measure between 12 and 25 millimetres in length. They are preserved in a carefully balanced medium of water, natural alcoholic vinegar, sodium chloride (salt), calcium chloride, and potassium metabisulphite. This blend enriches the flavour of the gherkins, giving them a distinctive tang while ensuring complete food safety. The gherkins maintain a firm and crispy consistency, with a fresh, healthy texture that makes them a preferred choice for gourmet preparations. Their natural colour ranges from light green to darker green, which is retained beautifully through the pickling process.

To guarantee export quality, the acidity of gherkins preserved in natural alcoholic vinegar is maintained at 3.2 percent with a permissible variance of 0.2 percent, while the salinity level is set at 4 percent with the same tolerance. This precise formulation provides a shelf life of up to one year from the date of production. By combining traditional preservation methods with modern food safety standards, Fafodil ensures that every barrel of gherkins meets international requirements while delivering exceptional taste and freshness.
